The Newari Khaja Set is the Kathmandu Valley's most distinctive culinary tradition — an elaborate beaten rice (chiura) platter with an astonishing array of side dishes that showcase the sophistication of Newar cuisine.

A traditional khaja set includes: chiura (beaten rice), choila (spiced grilled buffalo), aalu tama (potato and bamboo shoot curry), bhatmas sadeko (spiced soybeans), fried egg, dried fish, bara (lentil pancake), fried peanuts, and multiple achars. The combination of textures and flavors — smoky, tangy, spicy, crunchy, soft — is a revelation.

Newari cuisine is distinct from mainstream Nepali cooking, with heavy use of buffalo meat, fermented foods, and mustard oil. The culture around it is equally rich: Newari feasts (bhoj) for festivals, weddings, and community gatherings follow elaborate protocols with dishes served in a specific order on leaf plates.

The best places to experience it are in the old Newar cities: Kirtipur, Bhaktapur, and the backstreets of Patan.
